Pea, corn + zucchini frittata

Something quick, easy and very healthy to start the week after a long weekend of indulging!

Pea, corn + zucchini frittata
2 large zucchini’s, grated
1 cup peas + corn (I used the frozen type)
1 cup almond meal
2 large free-range eggs
2 Tbls coconut oil
Salt + pepper
(If mixture is too wet add more almond meal or if too dry add more coco oil. You can add 1/2 cup of some good quality grated cheese to this recipe if you like.)

1. Throw everything in a large mixing bowl and stir through well.
2. Pour in baking pan and bake approx 40mins 180 degrees.
3. Let cool before serving. Enjoy with a smile.
