Organic beef balls + quinoa

Just made these tasty and healthy organic beef balls on a bed of quinoa and thought I would share. I don’t eat much red meat (maybe once a month) but when I do I make sure it’s excellent quality and local. You could make a double batch and keep them in the fridge for lunch the next day.

Organic beef balls + quinoa
Ingredients
500g organic beef mince
1 tin organic diced tomatoes w. herbs
1 brown onion, diced
Tbls mixed herbs
1 tsp garlic, crushed
olive oil
S+P
1 cup quinoa
Green beans, steamed, as many as you like!

Method
1. Put quinoa in pot, cover with 3 cups water and bring to boil. Let simmer for 15 minutes.
2. While quinoa is simmering brown onions + garlic in pan w olive oil.
3. In large mixing bowl combine mince, onions, S+P and mixed herbs. Roll into bite size balls.
4. Cook balls in pan approx 5 mins until brown. Add tomatoes and let simmer for a further 10 minutes.
5. Serve beef balls on quinoa with a side of greens! Delish!
