Choc almond truffles

I like having healthy treats on standby at home for those chocolate hits or if guests pop over. This recipe has no refined sugars, uses all natural ingredients and includes those great essential fatty oils our bodies love. You can use whatever nuts you like.

Makes approx 10
  • 1/3 cup Quinoa flakes
  • 2 tbsp. Shredded coconut
  • 1 tbsp. Almond meal
  • 5 fresh dates, chopped
  • 1/3 cup raw almonds, chopped
  • 1 tbsp. Cacao powder
  • 2 tbsp. Coconut oil, melted
  • 2 tbsp. Honey or Agave nectar
  • 1 tsp. Chia seeds
  • 1 tsp. Vanilla
  • 1 tsp. ground cinnamon  
1. Place all ingredients in food processor and mix until well combined.
2. Roll into bite size balls and put in fridge to set – I put mine in the freezer. YUM!
Tip: if mixture is too wet add some more almond meal or quinoa flakes & if too dry a touch more coco oil should do the trick.
