Chinese Stir Fry with Plums

One of the best parts to summer is the delicious stonefruit that floods our markets and grocery stores. Growing up I can always remember having a massive bowl of stonefruit on the table around Christmas time. Eating any food in season and locally is always best for us. I love to get creative with peaches, plums, apricots and nectarines. Here is one easy recipe I hope you love. Will post a dessert one soon!

Prep time: 5mins
Cooking time: 5mins
Serves: 4

Six plums, halved and stone removed
250g beef strips
3 cloves garlic, crushed
3cm ginger, grated
2 bunches bok choy
1 tablespoon oil
1 tablespoon soy sauce
¼ cup plum sauce

  1. Heat oil in wok or frying pan over high heat. Cook beef until well browned on both sides
  2. Add garlic, ginger and bok choy. Stir fry until bok choy is just cooked, adding soy sauce when required
  3. Add plums and plum sauce, and gently stir until plums are warmed through
  4. Serve with noodles or rice. I always like to use brown rice!
