Chickpea + sesame patties

For dinner tonight I made chickpea patties. These are great if you want to make a healthy alternative to meat patties for the family without sacrificing deliciousness. I used what I had in my kitchen to make these although if I make them again I’ll add fresh coriander and a squeeze of lime for a bit of zing!

Makes 6 (I ate one before I took the picture)

Can of organic chickpeas, drained
1/2 cup almond meal
1/2 carrot, grated
Tsp crushed garlic
Tbls sesame seeds
Dash of sweet chilli sauce (I didn’t have any fresh chilli)
Coconut oil

1. Mash chickpeas & almond meal in large mixing bowl
2. Add all ingredients to bowl except coconut oil and mix well with hands
3. Roll into balls then flatten between hands
4. Grill on pan in coconut oil until golden. Enjoy!

You can serve these on toasted wholemeal buns with fresh tomato and lettuce. I steamed some brussels sprouts and squash.
