Blueberry + coconut power balls

Sunday is a great day to prep meals and healthy snacks for the week ahead. While Violet (and the husband) napped today I whipped these up in about 10mins. I filmed the whole process on Snapchat, where you can see how getting the consistency is right in order for the balls to roll. I used Blackmores new Blueberry blend superfood powder. This baby is loaded with Vitamin C and antioxidants, so that combined with natural protein and essential fats makes these balls pretty amazing.

Ingredients
12 pitted dates, chopped
1/2 cup Raw protein powder
2 tsp Blackmore superfood powder – wild blueberry blend
1/2 cup Almond meal
3-4 Tbls coconut oil, plus extra if you need to adjust consistency
2 Tbls shredded coconut, plus extra for rolling

Method
1. Add all ingredients to bowl and mix well.
2. Roll into balls and coat with extra shredded coconut.
3. Store in fridge for up to 5 days.
