Almond + date power balls

Great to make at the start of the week to keep in the fridge for a snack. Can also pop into the kids’ school lunch box!

Almond + date power balls
1/2 cup pitted dates (soaked in shallow water for 15mins)
1 1/2 cups whole roasted almonds
1 Tbls chia + almond spread
2 Tbls coconut oil, slightly melted
2 tsp manuka honey
chia seeds, for rolling
shredded coconut, for rolling

1. Pulse almonds in food processor until crumbly.
2. Add all other ingredients to processor and mix to combine. Keep an eye on consistency – if too dry add more coco oil, if too wet can add some almond meal.
3. Roll into bite size balls then roll in chia seeds or shredded coconut, whichever you prefer. Could also roll in other ingredients including goji berries/ cocoa powder.
4. Refrigerate for 30minutes until set. Store in fridge until ready to eat.
